Kerala chammanthi

 

Ingredients:

  • Red Chilli - 5
  • Coconut oil - 1 TSP
  • Coconut - 1 cup
  • Cummin - 1/2 TSP
  • Onion - 10 small whole or 1 medium large (cut)
  • Tamarind - 1 small gooseberry size
  • Ginger little (1/2 inch)
  • Garlic - 1 big pod
  • Salt


Description:
  1. Pour coconut oil in a pan
  2. Fry onion and transfer to mixie bowl
  3. Fry chilli and tamarind and transfer to mixie bowl
  4. Add Cummin
  5. Add Ginger
  6. Add Garlic
  7. Add coconut
  8. Add salt
  9. Grind nicely
  10. Make small balls
  11. Enjoy :)

Ingredients:

Giner - 1 cup

Coconut - 1/2

cook with coconut oil - 2 - 3 TBBSP

Chili powder - 1/2 tsp

Coriander - 1/2 pinch

Turmeric - 1 pinch

Tamarind - 4 inch

Salt


Directions:

Grind Ginger

Grind Coconut

Mix Ginger and Coconut

Cooker (paste, tamarind and salt)

1 whistle

open and cook for 2 minutes

  • Oil or Butter - 1 spoon
  • Onion 1
  • Ginger Garlic paste - 1tsp
  • Cabbage - 1/4 cup
  • Carrot - 1
  • Beans - 8-10
  • Bay leaf - 1
  • Water (boil for 3-4 mins)
  • Green Peas - 3 TBSP
  • Corn - 3 TBSP
  • Cook for 2-3 mins
  • Add salt and pepper
  • Red chilli flakes little
  • 3 TBSP corn flour added with water (mix and add for thickness)
  • Cook until thick consistency

Lady's Finger Puli Kuzhambu

 

Ingredients:

  • Oil - 2 TBSP
  • Vegetable (Lady's finder, Brinjal or Bitterguard or any vegetables)
  • Onion - 1 (medium) (small slices)
  • Tomato - 1 (medium) (grind it)
  • Garlic - 10 pods (slice it)
  • Kuzhambu Masala - 2 TSP
  • Chili powder - 1/2 TSP
  • Turmeric - 1/4 TSP
  • Mustard, Cumin and Methi
  • Salt as needed
  • Water as needed
  • Tamarind paste
  • Jaggery little

Steps:

  1. Oil  
  2. Vegetable (fry for 5 mins)
  3. Remove vegetable
  4. Add Mustard + Cumin + Methi
  5. Add Onion + Garlic and fry till onion transulant
  6. Add Kuzhambu Masala + Chili powder + turmeric
  7. Add tomato
  8. Salt
  9. Add water and boil for 5 mins
  10. Add Tamarind paste and Jaggery
  11. Boil for 5 mins till the consistency arrived

Mango Kootu

 

Ingredients:

  • Raw Mango - 1
  • Chilli powder - 2 spoon
  • Asafoetida - liitle
  • Red Chilli - 1
  • Salt as needed
  • Oil - 2 spoons
  • Seasoning (Mustard, Jeera, Methi, Red Chilli, Asafoetida)


Making:

  • Cut mango into small pieces
  • Mix mango with Chilli powder and salt
  • Keep it for minimum 10 mins
  • In a vessel, pour oil and put seasoning
  • Add Mango mixture
  • Cook for 1 minute
  • Remove from flame

Appam

 

Ingredients:

  • Raw Rice - 4 cups (white cup)
  • Puzhungal Rice - 1 big curry spoon
  • Urad Dal - 1 big curry spoon
  • Banana - 2 small or 1 big
  • Coconut - 1 cup
  • Cooked rice and/or dosa batter - 1 big curry spoon
  • Salt - 1 spoon

Making:
  • Mix Raw Rice, Puzhungal Rice, Urad Dal and soak and grind it
  • Grind Banana and add it
  • Grind Coconut and add it
  • Grind cooked rice and add it
  • Add dasa batter if needed
  • Add salt

Ingredients:

  • Kizhangu - 2
  • Turmeric - 1/4 TSP
  • Salt as needed
  • Coconut - 1/4 cup
  • Oil to tadka (2 TSP)
  • Mustard (1 TSP)



Preparation:

  • Remove skin of Kizhangu and cut it into small pieces
  • Put it in pressure cooker and pour water to just cover it
  • Add Turmeric and salt and mix it
  • Pressure cook it for 3 whistles
  • Put frying pan
  • Pour oil and add mustard
  • Add Kizhangu (after filter if there is extra water)
  • Add coconut
  • Mix well until it comes to the consistency which we wanted
  • Enjoy kappa with fish curry

Quinoa Pulao

 

Ingredients:

  • Quinoa - 1 cup (Red)
  • Dal (Door or Channa or Moong) - 1/2 cup (Red)
  • Carrot -1 
  • Potato - 1
  • Onion - 1
  • Green peas - 1/4 cup
  • Ginger Garlic paste - 1 Table spoon
  • Green Chili - 5
  • Turmeric - 1/4 TSP
  • Cumin Powder - 1/4 TSP
  • Garam Masala - 1 TSP
  • Chili Powder - One pinch
  • Pepper Powder - One pinch
  • Asafoetida /Perungayam - one pinch
  • Oil 2 TSP
  • Water - 2 1/4 cup (Red) 
  • Lemon Juice - 1/4 lemon


Hint: 1.5 cup water for 1 cup Quinoa and Dal.


Preparation:

  1. Soak Quinoa and Dal for minimum 30 minutes
  2. Keep the cooker and add oil 
  3. Put spices like non veg preparation
  4. Mustard, Cumin and moon dal
  5. Add Green Chili
  6. Add all the vegetables and fry for 10 mins
  7. Add Ginger Garlic paste
  8. Add Turmeric, Chili powder, Cumin powder, Pepper Powder
  9. Add soaked Quinoa and Dal and fry for 5 mins
  10. Add salt
  11. Add water
  12. Add Lemon Juice
  13. Pressure cook for 3 whistles
  14. Cool, serve, and enjoy!

Eggless Pancake

 

INGREDIENTS 

  • 1 bananaripened
  •  cup milk
  •  cup maida
  • ¼ tsp baking soda
  • 1 tsp baking powder
  • 2 tbsp sugar
  • ¼ tsp salt
  • 3 tbsp melted butter
  • 2 tsp vinegar or 1 tsp yogurt


INSTRUCTIONS


 

  • firstly, in a mixer jar take 1 banana and 1 cup milk.
  • grind to smooth puree making sure there are no chunks of banana.
  • pour the banana puree into a large bowl.
  • add 1½ cup maida, ¼ tsp baking soda, 1 tsp baking powder, 2 tbsp sugar, ¼ tsp salt, 3 tbsp melted butter, and 2 tsp vinegar.
  • whisk and mix well making sure everything is well combined.
  • now add ½ cup more milk if required to adjust the consistency of the batter.
  • grease the non-stick frying pan with butter and pour ¼ cup pancake batter over the medium-hot pan.
  • cook for 1 minute or until the bubbles appear on the surface.
  • now flip it over and continue to cook until it is cooked through.
  • finally, transfer Banana Pancake Recipe to a plate and serve with maple syrup, honey, and extra butter.

Easy Chocolate Cake Recipe From Scratch (So Moist)

INGREDIENTS

  • 2 cups granulated sugar
  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking soda
  • 1 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Chocolate Buttercream Frosting:

  • 1 cup unsalted butter softened to room temperature
  • 3 ½ cups confectioners' sugar
  • ½ cup unsweetened cocoa
  • 3 tablespoons milk or heavy cream
  • ¼ teaspoon salt
  • 2 teaspoons vanilla extract

INSTRUCTIONS

  • Preheat oven to 350°F/175°C. Grease and flour two 9-inch round cake pans or grease a 9x13 pan.
  • In a large bowl, stir together the sugar, flour, cocoa, baking soda, baking powder, and salt. Add the eggs, milk, oil and vanilla, mix for 3 minutes with an electric mixer.
  • Stir in the boiling water by hand until batter is well combined. (The batter will look runny, but have faith... it'll turn out!) Pour evenly into the prepared pans (or pan).
  • For two 9-inch cakes, bake for 30-35 minutes, until a toothpick inserted comes out clean. For 9x13 cake, bake for 40-45 minutes.
  • For two 9-inch cakes, cool cake for 10 minutes in the pans, then remove from pans to cool completely.
  • The cake is delicious by itself, either slightly warm or even chilled. Try it with the chocolate buttercream or whipped cream topping. Add some berries or cherry pie filling with the whipped cream, if desired!

Chocolate Buttercream Frosting:

  • With an electric mixer, beat the butter until creamy, about 2 minutes. Add the confectioners' sugar, cocoa powder, milk or cream, salt, and vanilla. Mix together on low speed. Increase to high speed and beat for 3 minutes. If frosting is too thin - add up to 1/2 cup more sugar. If too thick - add another tablespoon of cream or milk. Yield: 2 1/2 cups.

RECIPE NOTES

Cupcakes: Fill about 30 cupcakes liners in muffin pans to about 2/3 full. Bake at 350 degrees F for 22-25 minutes.

Chipotle Spicy Sauce for 3 people

 

Ingredients:

  1. Red Chilli (6 - 2 for each person) - Fry and crush
  2. Tomato - 1 medium size (grind it)
  3. Tamarind paste - 1 Tea Spoon
  4. Pepper powder - 1 pinch
  5. Methi Powder - 3 pinch
  6. Chilli Powder - 1/4 Tea Spoon

Preparation:
  1. Oil + Mustard
  2. Add crushed red chilli
  3. Add Tomato paste
  4. Add Pepper powder, methi powder, chilli powder
  5. Add salt
  6. Cook until it blends and has a nice taste
