Shallot Vatha Kuzhambu

 

Have you tasted Vatha Kuzhambu? One of the easiest to make but amazingly tasty dish. I am sure those who have tasted it will agree. And the best part is that it keeps good for 3-4 days too. You can try this recipe with regular onions too. You can even make it plain or with sun-dried berries if you want to store it for a longer period. Do give this recipe a try and share your feedback. Few tips/notes:
1. Once you extract juice from tamarind, filter for any impurities. You can dilute the tamarind with 3 glasses of water.
2. When you are adding the spice powders, keep the flame on low heat to prevent them from burning. Immediately add shallots. Otherwise, the colour of the kuzhambu will change.
3. Cook on low flame through out to get the best flavourful vatha kuzhambu.

Shallot Vatha Kuzhambu

25-30 small onion/ shallot
1/4 cup sesame oil
1 tsp mustard seeds
1 sprig curry leaf
Large pinch asafoetida
3 tsp sambar powder
1tsp chilli powder( you can use Kashmiri Chilli powder for that nice colour)
1/4 tsp turmeric powder
1 tsp jaggery
Salt to taste
